CousCous with Ratatouille

Ingredients for 4 persons:
2 aubergines
2 peppers (one yellow and one red)
2 tomatoes
1 onion
4 spoonfuls oil
stoned black olives
basil leaves
salt, pepper at your choice

Preparation:
Prepare the vegetables, wash them and cut into a brumuage. Warm 3 spoonfuls of oil in a pan, pour the prepared vegetables, add salt and pepper. Cook on a low gas with a lid for about 20 minutes, stirring every now and then. Take the lid off, add the olives and the basil and keep on the gas for another 2 minutes. Once you have prepared the ratatouille, pour the couscous, prepared following the base recipe, onto a serving dish and cover with the vegetables. To be served hot.
