Ingredients for 4 persons:

g couscous
4
tomatoes
4 leeks
a tuft of mint
4 small zucchini
4 lemons
oil,
salt and pepper at your choice

Preparation:
Put
couscous into a salad bowl, wet it with a glass of boiling water
and let it swell. Whisk the lemon juice with 6 spoonfuls of oil,
salt and pepper. Pour the condiment on the couscous, add the
tomato slices, the zucchini cut julienne and the leeks cut into
rings. Complete with the mint leaves finely chopped, stir and keep
refrigerated until the moment to serve.
