Ingredients for 4 persons:
500
g meat at your choice (lamb, beef, chicken, and so on…)
2 leeks
1 clove of garlic
2
carrots
2 zucchini
1 piece of celery
2
tomatoes
1 leaf of laurel
2 dl meat broth
oil,
salt, pepper, parsley

Preparation:
Cut
the meat into cubes. Prepare the garlic and cut the leeks; let
them brown in a pan with 3 spoonfuls of oil, add the meat and let
everything brown. At your choice add half a glass of wine, then
add chopped celery and carrots, the laurel and peeled tomatoes
previously cut into small pieces, and to finish add hot broth. Cover
with a lid and let cook for about one hour. Add then zucchini cut
julienne and the parsley, Add salt, pepper and finish to cook
maitaining everything wet and not too dry. Cook
couscous following the base recipe; pour it into the serving dish
adding meat and vegetables.
